I was completely incommunicado this weekend as I went on a virtual meditation retreat with Susan Piver and the Open Heart Practitioners. On Friday Shannon was nice enough to help me prepare by getting out and getting groceries for some delicious, nutritious food for the weekend. Next time I hope to have food prepped ahead of time. That would have brought more relaxation to the weekend for sure! Still, there was lots of yum!

Lots of different kind of goodness going on here Jamie! Did you make the soup? Auntie Laima brought me a giant butternut squash too. Hope the retreat went well!

Thank you! I really gently working with revitalizing eating and cooking here and this weekend was a good start to that.

I did make the soup, Suzie. What a treat to make it with a squash from Auntie Laima and Uncle Meinhard's garden! We had a hard time getting the right consistency though. It felt a bit more like mashed potatoes than soup but it was still delicous :)

The one I have is very big, sounds like it did not roast all the way through but I am glad it was delicious!

I really wasn't sure how much broth to put in and I think that's what did it. Next time I'd put in much more.
