Did you know chia seeds, as in chia pets... are good for you? Not only that, when you let them soak in water they turn into a gel that can be used as a fat replacement. I know, sounds totally unappetizing but I tried this method for the first time and put it in my smoothie. It did not break down as much as I wanted but I will try baking with it soon.

I thought it was a joke Shannon, LOL. Thank you! I was a little nervous about this one. Low-fat baking with it is going to be the real test. Personally, I like them ground up with my flax seed in Alpen the best.
