Inspired by an episode of Jamie Oliver's 30-minute meals, Justin and I attempted to make Summer Veg Lasagne, Tomato Salad and a frozen mango dessert. We were absolutely cooking, cutting, prepping for 90 minutes. The process was exhausting! The lasagne? Meh. And we'll be eating it for days! Still, the last two were utter winners - delish! We'll definitely make them again and again. All in all, it was quite an adventure and I could see how if you were super-familiar with the recipes, it would be faster. Still, truthfully, even the clean up was intensive!

So this is the linear version of my March accomplishment calendar. At the end of the month I like to redistribute the tacks to get comparative sense of how I'm goid on my goals and this month wsa much better than last, with improvement in almost every area - woohoo! Oddly I did add one tack that didn't match any pattern, I wonder what the heck I did that day!

We had a not-very-exciting weekend. Our car had to go into the shop. They called to say that it was no big deal. Then my salon called to confirm my appointment. I said OK. Then the auto shop called and said it was a huge financial deal. What is it with me getting my hair cut followed by huge financial strife?
What does this have to do with the photograph? On Friday I agreed that Reg could finally take me for a big grocery shop because we were out of food. Then we found out about the car being in the shop all weekend. This is the last of the food in my freezer for us to eat. I do really recommend Rachael Ray's Veg Head Chili. Tasty, cheap and makes enough for a small army. Fed me last night!

Suzie, it's so brilliant to have food in the freezer. I'm glad you've had some go-to meals. (And I'm going to check out that recipe. Chili's a regular fixture at our place!)
I'm sorry about the haircut though and about the expense of the car. It just sucks when those things happen!
Jamie, is that from his new cookbook? I haven't started it yet but I want to because I am skeptical and now I am REALLY skeptical! And the lasagna was meh? I often find his flavours to be a little too basic. That was a lot of work, well done for the effort though.

Jamie, I think you would really like the chili. It's awesome as a dipper with tortilla chips too but also very good on rice. It's very creamy. The first time I made it, Reg didn't realize it was vegetarian. ;)
Yes, I was heartbroken about the news about the car. Going to take all our savings and we haven't been making it from paycheque to paycheque. Thanks. I'm doing my best and still going to get my haircut damn it!

We lost a lot of time by doing things consecutively and we had a bit of a misstep working with a recipe version from online. It could definitely be done faster but wow, it took it out of us.
The frozen dessert was so awesome though: mango, yogurt, mint leaves and lime zest in a food processor (we started in the blender and had to move to the food processor - more time lost, more dishes to be done). Very simple. Exquisitely delicious. We'll be making this throughout the summer for sure.
The chili sounds awesome! We'll totally give that a try.
Oh, Suzie, it's tough when things like that eat up our resources. I hope you get your haircut soon.
The green stars are for staying on budget :) It was a big wake up call last much how much I went over, so I made a very firm effort to stay on track :)
Looks like food adventures all around, with diving into new recipes and making what you have last! If I put my food pics up it would be sooooo boring, heheheh.
Jamie, his cookbook looks daunting. The layout insane! OK, I think I will pick one element and try to hope I make it in 30 minutes. That mint dessert sounds awesome! Sort of a smoothie meets sorbet, love it. I went in for my cut yesterday and put the car on Visa.
Shannon, so impressed with your budgeting skills! That system really helped you figure out where to put your energy, didn't it? And now you're rockin' at it.

That's interesting about the book, Suzie. I honestly might check it out. Two out of three elements of the meal were awesome. Still, I'm not happy with days of leftover meh!
I have to say every time I look at the pic I'm so happy with our kitchen! It took so much to get it renovated but it still makes me smile :)
Meh leftovers suck! But your kitchen, looks amazing. I've been meaning to add that to the comments. It looks right out of a FNC show. So elegant!
